SALISBURY STEAK WITH ONION GRAVY This classic American salisbury steak from scratch is seared and simmered in a rich brown luscious onion gravy. Mouth watering, tender, salisbury steak is so delicious and easy to make. Salisbury steak with gravy will become you favorite weeknight ultimate comfort food!  Salisbury steak isn’t a steak it’s basically a fancy hamburger traditionally served with mashed potatoes. EASY RED ENCHILADAS Easy red enchiladas filled with seasoned ground beef and a blend of cheddar and monterey jack cheese. These flavorful enchiladas are always a hit! Fill with the seasoned beef and a sprinkle of cheese. I prefer to use a blend of freshly grated cheddar and monterey jack. It’s the best! Roll them gently and place them into the prepared baking dish. Pour any of the remaining sauce over top, then sprinkle with the remaining cheese. PESTO PASTA WITH SUN DRIED TOMATOES AND ROASTED ASPARAGUS A quick and easy dish for those busy weeknights, and it is chockfull of veggies! Like for this pasta dish here, I tossed the pesto in some simple ingredients like sun dried tomatoes, roasted asparagus and mozzarella cubes, finishing it off with a fried egg, and it was seriously one of the best weeknight meals ever! It’s so simple and easy to whip up, and my most favorite thing about it is that some of the pesto gets stuck in the crevices of the shell pasta. AH-MAZING, right? Plus, this tastes just as good, if not better, as work leftovers since the mozzarella cubes gets all melted/ooey-gooey in between the pasta. Brownie Batter Dip! One of my all time most favorite dips! BROWNIE BATTER Dip??!! YES, you heard that right and its just as good as it sounds! It is Egg-Free, creamy heaven! Its wonderful to dip a variety of things in it, pretzels, nilla wafers, graham crackers, even fruit!  Ingredients 1 package, 8 oz, cream cheese, softened 1 8 oz tube of cool whip 1 box of ghiradelli brownie mix, about 18 oz 2 tbsp whole milk 1 C mini chocolate chips, divided 1 disposable piping bag Instructions Using a standing mixer, beat the cream cheese until smooth. Add in the cool whip until smooth Add in the brownie mix and milk. Mix until smooth and fold in 1/2 C chocolate chips Scoop the brownie batter into the disposable piping bag Cut the tip off and pipe it into a serving dish Serve immediately or wrap the bowl in saran wrap and store in the fridge up to one day ahead. Chicken cooked in olive oil, with garlic, paprika, chili powder, and Italian seasoning, then combined with bacon, Ranch dressing and pasta makes a winning combination! One-Pan Paleo Chicken Apple Sausage & Sweet Potato Skillet A few years ago I made a delicious one-pan dinner with some chicken apple sausage, potatoes, and apples. It’s such a great meal and is full of some great Fall flavors. This time though, I decided to do a paleo version. Instead of regular white potatoes, I used sweet potatoes and the results were fabulous! This one-pan paleo dish is full of great flavors from the apple and sweet potatoes, making for quick tasty meal! Ingredients 4-6 Chicken Apple Sausage links, sliced 2 medium apples, cored & diced 3-4 sweet potatoes, diced ¼ C water Instructions Heat large pan on stove or electric skillet on medium high heat. 3-Ingredient Cheese Dip This 3-Ingredient Cheese Dip (aka Queso or Nacho Cheese Dip) is the easiest recipe for a cheese dip! Plus it’s made with real ingredients! No artificial cheese here. The three ingredients I used to make this simple cheese dip are plenty of real cheddar cheese, half and half for richness and corn starch to thicken it. Tara from from Noshing With The Nolands had sent a message awhile back after she had a reader who had made my Banana Crumb Muffins I had shared on her site a few years back, and loved them so much she asked for a Peach Crumb Muffin recipe.  It's my all time favorite peach muffin recipe. A soft tender cake like muffin with a coffee cake like crumb. They are a favorite way to start the day with my morning cup of coffee or tea.
